DAVID MICHAEL GARTNER runs a frozen seafood shop from Glenroy Bool-Lagoon Road in Penola, in the south-east of South Australia. The area is known for wine and grazing country, but it is also within easy reach of a coastline that lands excellent shellfish, and that is what this store is built on.

Ten lines make up the range: lobster tails, langoustine, black tiger prawns, mantis shrimp, hairy crab, clams, razor clam, sea snail, squid and sea cucumber. They are the species we cook at home, frozen down at the source and held at -18C. Species and net weight are printed on every pack, and nothing is glazed to make a product look heavier than it is.

Why we sell seafood frozen

On the Limestone Coast most seafood is landed in small quantities and sold the same week. Freezing it at that point holds the texture and sweetness that a slow trip to a city counter would otherwise cost, and it lets a household buy a fortnight of dinners in one go.

How an order is packed and sent

Each order is boxed in a foil-lined liner with dry gel ice measured against the weight of the seafood inside, not a fixed number of sachets, so a single box of lobster tails and a mixed order of clams and crab both arrive hard frozen. Orders are processed in 1 to 3 business days and delivery is estimated at 7 to 14 business days depending on where you are in Australia. Tracking is emailed as soon as the parcel leaves Penola.

Built for the Limestone Coast and the south-east of South Australia

Most of our customers are families cooking for four or more, so the packs are sized for a real dinner rather than a restaurant pass. If you are not sure how far a pack will go, the product page gives the net weight, and a question sent by email is answered the same working day.
